Musang King is one of the most sought after popular Durian Specie. It is best recognized by the star at the bottom of the fruit: 

Best size: 1.5 to 2 kg
Fragrance: strong
Brix:  38-42
Color: Dense yellow
Taste: Sweet and bitter
Best Use: 6-10 hours after harvest. 

After the fruits are harvested, they are put through an Instant Quick Freeze (IQF) technology to deep freeze the fruit fruits. IQF can preserve 100% of the goodness of the fresh fruit, and stored at -18''C, the fruit can be preserved for up to 24 months. 

The fruit requires all the way cold chain in its distribution. When take out to defreeze for 3 hours, the fruit can be eaten. 

Fresh durian paste is made from taking out the flesh from the husk and de-seed. After that the paste is put on a lighted table so that the worker can take out any impurities that may have fallen to the paste. The paste is packed in 2 kg bags and put to deep freeze  using IQF.
