Fresh durian paste is made from taking out the flesh from the husk and de-seed. After that the paste is put on a lighted table so that the worker can take out any impurities that may have fallen to the paste. The paste is packed in 2 kg bags and put to deep freeze  using IQF. 

The Brix specifications for different durian specie is as follows: 
1. Musang King.                                Brix: 38-42
2. Pure D24                                       Brix: 33-36
3. Named Brand ( Tekka, 101 etc)    Brix:  31-34
4. Village Durian                                Brix: 30-32
